You see, sometimes I feel people don't smile at each other enough. Particularly, this time of year, when the holidays have past and we're all eagerly waiting around for Spring and Summer to arrive. Maybe it has to do with the shortened days, or the rain, or maybe some people are so caught up in there day to day, they've forgotten. Is that possible? I hope not, but trust me, do this and I bet someone will smile back, it's kind of contagious, plus it will make you feel better too.
This salad feels like a smile. It's full of flavors I love and it's bright and cheery to look at too. It will put you in a smiling kind of mood.
This salad is really refreshing. The sesame oil and ginger go really well with the oranges and avocado. I imagine a few radishes and toasted almonds could really put this salad over the top. *I used two oranges (one blood orange and one cara cara orange), but the original recipe calls for one. I also used regular spinach instead of baby spinach, it's just what I hand on hand. The dressing if lovely, depending on your likeness to the flavor of sesame, you might try adding a little more sesame oil and less of the vegetable oil.
Asian Spinach Salad with Orange and Avocado
Adapted from Epicurious
2 tablespoons finely chopped shallots
2 tablespoons seasoned rice vinegar
1 tablespoon vegetable oil
2 teaspoons minced peeled fresh ginger
1/4 teaspoon (generous) Asian sesame oil
2 oranges *see note above
1 6-ounce bag baby spinach leaves
1 avocado, halved, pitted, peeled, cut into 1/2-inch wedges
Whisk first 5 ingredients in large bowl. Season to taste with salt and pepper. Set dressing aside.
Cut off peel and white pith from orange. Cut orange into 1/3-inch rounds and cut rounds crosswise in half. Add spinach to dressing and toss to coat. Add avocado and orange and toss gently.
