Keeping it simple and no-cook for this weeks meatless Monday post. A much needed recipe for many of you who are experiencing a long Summer heat wave. Creamy white bean and basil spread thickly onto a toasted crusty whole wheat toast and topped with fresh tomato, red onion, and a little more basil.
