Meatless Mondays with Martha Stewart: Tomato and White Bean Toasts
Keeping it simple and no-cook for this weeks meatless Monday post. A much needed recipe for many of you who are experiencing a long Summer heat wave. Creamy white bean and basil spread thickly onto a toasted crusty whole wheat toast and topped with fresh tomato, red onion, and a little more basil. I've topped it with raw patty pan and Summer squash with equally delicious results. Find the recipe over at Whole Living.

This is so simple and looks so elegant. I'll bet it's more satisfying than bruschetta, too.

ReplyDeleteI just made a white bean spread the other day----also herbal-inspired, but with rosemary and garlic instead of basil. Eeryone who had it said they preferred it to hummus. Makes me want to make spreads out of lot of other kinds of beans/legumes..adzuki beans, anyone?

ReplyDeleteThis is my ideal breakfast, lunch, and dinner. There is nothing that says summer like a beefy heirloom and warm, crispy toast with a little salt. This is even more sophisticated, I've done it with hummus but the white beans are perfect. Love.
